Okay, I'm new to this thing...

What if somebody in the last 30 seconds of an auction bids for one million dollars. Ebay should show that he is the highest with only say $510.00. Then I snipe within the last 7 seconds of the auction for 700$, even though I bet at the last second and my bid went through, would I lose this auction?

A nuclear bid as a snipe is very, very dangerous. Here's why...

Fred sees a Widget and thinks "I'll have that!" and places a nuclear bid of, say $5,000,000

Now, say this then puts his bid in as $510, no-one will know his max.

Along comes Mint, decides the Widget is a must-have and places a nuclear snipe of $10,000,000

When the snipe gets placed, ebay accepts the snipe at 10 million dollars and its proxy system then comes into play.

And voila, the item is yours at....
$5,000,010 (or maybe more, depending on what the next increment is).

You're the winner but I doubt if you'll cough up so everyone is annoyed and no-one wins.

Now that's the disadvantage of nuclear snipes!

If you have decided that Fred has placed his max at $510 then a nuclear bid is OK (still risky but OK) but if he's equally keen to win then watch out...

Hope that makes sense!

So, if someone bids over my Max, then MY max becomes what the set price is?

I have determined that the actual object I'm bidding on is worth $1,000 (without the autograph, and it's set at $500) so I'm bidding an odd-number that's a bit higher than that. Nobody has bid on it, but it has about 340 hits? Do you think people are just waiting 'til the last seconds to bid? If so, do you think my bid is enough?

Okay, I'll bite, how could you tell how many hits were on your item?

There is a hit-counter at the bottom of the page. It just shows that 340 people have visited the page (but a lot of them are mine and maybe AutoSnipers if it takes a hit to load it's statistics when I veiw my snipes)

Does that mean the starting price is $500?

Yes.
I think the seller started it at that low because he figured there would be a ton of bids on it. It's not a bad item as it is, and it's autographed. I'm a big fan of the person who autographed it and I've been looking in to buying this kind of item for a while. You can't beat the price it's set at. I absolutley cannot lose this, because I want this item cheap, and I want it autographed, which is why I signed up for AS, I do not like losing. The auction ends at 11 pm, is 7 seconds enough for a good lead in or is this one of "Ebay's Peak Hours"?
I guess you are referring to these:

Looks like Sara forgot to follow up. You’ll notice only one person posted that they were having a problem. If this hadn’t been cleared up right away, there would have been posts from several users. If the problem persisted this long, there would have been an uprising. Your snipe is safe.

P.S. This didn't appear to impact snipes being placed on ebay. It was only slow in bring up AS' pages.
