I've lost a few bids that confuse me. Sometimes the winning bidder shows (via ebay's bid history) a bid amount that his/her bid was placed days ahead of mine, even though I have a 3 second bid time...How did I get beat by a bid placed 5 days prior?

You got beaten by a proxy bid. EBay only shows that part of a bid which is enough to top all other bidders at any given point in an auction. It does not show the total amount of anyone's bid unless that person has reached his or her maximum bid. You got beaten by a five-day-old bid because it was higher than your maximum bid to start with, even though eBay didn't show it. It happens to all of us sooner or later.
