what is the procedure for adding insurance on a auction that you have already won or is it to late.

To the best of my knowledge you can take up insurance up to 48 hrs after an auction. To do that, bring up the snipe you won then click modify then add the insurance.
I think it only works if you're buying from USA (I'm in the UK) - maybe someone at AS could confirm all this?

EDIT: The snipe reappeared about 7 minutes later. In the meantime, I had just gone ahead and paid for the item through eBay and PayPal. The snipe now has a note that insurance is on it and the "You Won" changed from blue to green. I guess I have insurance on it and I will be billed through AS, eh?
