Quick and hopefully not stupid ?...If I bid a max of 7500.00 and the bidding is only at 6200.00...Will "AS" jump right up to the Max I bid or only as far as they need to so that I win???

AS places your max bid as if it was you bidding - read up on Proxy Bidding on ebay's Help screens.

so let's see if I understand: all AS does is put in a maximum bid on ebay, exactly as if it were I doing it for myself, but at the 8 second sweet spot moment...

Yep - that's ALL it does!
But that's enough to avoid bidding wars and stop alerting others of your interest until those last 8 seconds! Pretty neat eh?

But, you won't have to pay all of your max bid... you'll only pay the next increment above the last persons max bid!
