Mrs M. Same as a peach for tomato. I use corn startch and cook a pan of filling then layer the tomatoe. Then the filling is not lumpy. Put lemon in the filling or it's kind of flat - just a dash of cinnemon. Fill it high like a fresh apple as it collapses. Serve with a sharp cheddar slice. yummy...
