I forgot MG: the professional baking
pads are called "Silpat" they are a high temp virgin silicone. I looked them up and they are down to $14 Half what I paid for mine. Put the pad on the cookie sheet and drop your pastry on the Silpat. Nothing sticks to them - just wipe off. Have fun...
