Good things cookies do:

let web sites remember you so you don't have to log in all the time

save your personal preferences for options available on a site

remembers where you've been and what you've seen so it's not displayed as 'new' to you over and over

It's perfectly safe to delete cookies - or to leave them - unless you have tons of them. Then you'll notice things like (in internet explorer at least) not being able to view the source for a web page. Even then, clearing your history and temporary files usually regains enough memory to get things working again.
